How To Make Cheesecake with Fruit Topping
Ingredients:
For the cheesecake you will need:
- 1 cup graham cracker crumbsYou can make any flavor topping you like using frozen fruit and jam, in this case we’re making a blueberry cheesecake. So for that, you’ll need:
- 2 tablespoons white sugar
- 1/4 cup melted butter
- 2 (8 ounce) packages cream cheese, softened
- 1 cup sour cream
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- 4 eggs
- 2 cups frozen blueberries, dry pack
- 1/3 cup blueberry jelly
Directions:
1. First, we start with the crust. After preheating your oven to 325°, combine the graham cracker crumbs, two tablespoons of sugar and the melted butter in a small bowl.
2. Now, pat that mixture into the bottom of a 9-inch springform pan, and set aside.
3. In a large bowl, mash the cream cheese until it’s soft and creamy. Try not to use the beater at this point because if you beat the batter too much your cheesecake will crack.
4. Then beat in the sour cream, ¾ cup of sugar, the vanilla and the flour.
5. When that’s incorporated, beat in the eggs one at a time.
6. Next, pour the cheese mixture into your crust-lined pan.
7. Now bake your cheesecake for approximately one hour, or until it’s firm to the touch. But be careful not to overbake it! There should be a 2-3 inch wobbly spot in the center when it’s ready.
8. Now, turn off the oven heat and open the door a crack, and leave the cake in there to cool for about an hour. Once that’s done, loosen the edges from the sides of the pan with a knife.
9. Now for the topping, start by melting the jelly in a saucepan on the stovetop.
10. Then cover the top of the cheesecake with the frozen fruit, and coat that in the melted jelly to glaze.
11. Finally, keep the cake chilled until you’re ready to serve.If you want your cheesecake to be really fruity, be sure to add some of the frozen fruit to your batter.
