Nothing says Christmas like candy canes, so what better way to get your fix than to add them to some of your Christmas baking? Mint and chocolate together is a perfect flavor combination, so take some gooey, bite-sized, chocolatey dough, add a little bit of crunch, color and minty aroma on top and you've got some very festive cookies. Be careful not to overbake these, because they're best if they're just slightly underdone. - 6 ounces of chopped bittersweet chocolate - ¾ cup butter - 1 ¼ cups sugar - 2 eggs - 1 ¾ cups flour - ½ tsp. baking powder - ⅓ cup chopped candy canes, for decoration

1. After preheating your oven to 350°, melt the chocolate and butter together in the top of a double boiler. Make sure to keep stirring so it doesn’t burn. 2. When that’s done, mix in the sugar. 3. Next step is to add the eggs. So you don’t end up with scrambled eggs in your dough, crack them into another small bowl one at a time and add a little bit of the warm chocolate mixture to temper them. 4. Then add that back into the chocolate mixture and stir until it’s all combined. 5. All that’s left is the flour and baking powder, so combine those, add them and stir until it’s all combined again. That’s your dough! Now refrigerate it for two hours so it firms up a bit. 6. When your dough is ready, scoop out heaping teaspoonfuls and roll them into balls. Then, place them on a greased baking sheet about two inches apart. 7. When all your balls are ready, bake them for 9-11 minutes, or until they’re lightly browned. 8. Immediately when they come out of the oven, sprinkle some of your chopped candy cane on top. Leave them to cool for three minutes on baking sheets; then move them over to wire racks to cool completely.
These are great for a cookie exchange, or a perfect snack to leave for Santa on Christmas Eve!
