Not only did they edit out extreme violence and blood, but the changed ethnicities of characters, and made changes to the story so much so it caused major plot holes.

Pokemon was already a program targeted towards Japanese children. I can understand changing and editing out weapons, but changing rice balls to hamburgers seems a bit much.
