Pretzels are one of the most popular street foods on the planet, and why not? They're portable, delicious, and you can get them in either sweet or savory flavors. 1. Start by preparing your yeast: in a small bowl, dissolve the yeast and 1 tsp of the sugar in your warm water, and let it stand for about 10 minutes. 2. Meanwhile, mix together 3 ½ cups of the flour, ½ cup of the sugar, and the salt in a large bowl or the bowl of your stand mixer. 3. Now, make a well in the center of your dry ingredients and add the melted butter and the yeast mixture. 4. Mix everything together until a dough forms. At this point, add the remaining flour a little at a time until your dough is no longer sticky. You may not need to use all of it. 5. Continue kneading that for 7-8 minutes until it is smooth. You can either do it by hand, or with a stand mixer and a dough hook. 6. Lightly oil another large bowl, place your dough in that bowl and turn it to coat. Cover the bowl with a damp towel, and place it in a warm place to rise until it's doubled in size, which should take 1-2 hours. 7. When that's risen, preheat your oven to 400 degrees, and dissolve your baking soda into the hot water. You can leave it to simmer on the stove while you work. 8. Next, turn your dough out onto a lightly floured surface and divide it into 12 equal pieces. Then, roll each piece into a thin rope that's about 20-24 inches long, and twist it into a pretzel shape. To make sure your ends stick, glue them with a little water. 9. Now, dip each pretzel in the baking soda and water mixture for about 10 seconds each, and leave them to drain on a piece of parchment paper. This is what gives the pretzels their unique flavor and texture. 10. Place your pretzels on a greased baking sheet, sprinkle them with the kosher salt, and bake them in the oven until they're golden brown, which should take about 8 minutes. 11. Right when they come out of the oven, brush them with melted butter and you're good to go!
You can change up this recipe by using a cinnamon sugar topping instead of salt, just be sure to add it after you've buttered the pretzels once they're cooked. Be sure to add some icing to get the perfect combo!
