Regional Chinese Food and Cooking

When thinking of Chinese food, we often consider rice and spring rolls. Naomi Duguid, together with husband Jeffrey Alford, has put out a number of successful cook books on the subject of world cooking. In their book, Beyond the Great Wall: Recipes and Travels in the Other China, the couple outlines unique regional cuisine in China that is mostly ignored outside of the country. They also trace the changes the country has undergone since they first began traveling there in the 1980s.
