Why We Overeat  Part 1 Dr David A. Kessler, former FDA commissioner under presidents Bush and Clinton, was instrumental during his tenure in the organization’s attempts to regulate cigarettes. He is now comparing his fight against Big Tobacco to his fight against Big Food. In his book, The End of Overeating, Kessler states that the presence of salt, sugar and fat in our diets initiates a cycle that causes us to overeat against our better judgment.
